We offer several pan configuration options that help your kitchen improve functionality and convenience. Our models accommodate various pan configurations, including 1/6, 1/3, and 1/1.
Each TSSU comes with a set number of 1/6 polycarbonate pans, depending on the model. When removed, the empty space allows for complete customisation. For example:
A 1/3 pan fits the space of two 1/6 pans, and a 1/1 pan fits three 1/3 pans. This flexibility lets you replace smaller pans with larger ones for high-use ingredients.
In a pizzeria, for instance, you might use a 1/1 pan for cheese, 1/3 pans for popular toppings, and 1/6 pans for less common items. Whereas, in a poke bowl operation, larger pans can hold base ingredients like rice, while smaller pans store toppings like edamame, avocado, or sauces.

Depending on the combination layouts, additional divider bars may be needed. These can run vertically or horizontally across the area of your TSSU.

True’s TSSUs are designed to accommodate different operations. While many customers prefer to maximise the number of pans, it’s entirely possible to have a longer cabinet with fewer pans, allowing for more space for other equipment like a double grill, food processor, or even plates.

The top pan area comes with either a Hood or Flat Removable Lid (FLID), but we also offer a glass lid option for certain sizes. This configuration option is popular as it offers maximum product visibility and allows customers to stand on the opposite side of the cabinet and select their preferred toppings or ingredients from the pans.
Additionally, on select sizes we can provide a unique ‘Dual-sided’ option. These units feature cutting boards on both the front and back, effectively doubling your prep space and enhancing efficiency during peak times. These are particularly useful in busy salad bars or sandwich shops, where two prep lines can operate simultaneously without cross-traffic.
On certain models, to help you facilitate instant access to prepped and refrigerated toppings, you can even choose doors, drawers or a combination to suit your kitchen.
